Batch ovenMicrowaves, hot air, grill and optional steam

Ares is a range of professional ovens that can be used in commercial kitchens, artisanal laboratories and industrial laboratories to carry out pasteurisation, cooking, heating, reheating and defrosting processes.

The Ares microwave oven has been designed for both professional and industrial use in the food sector and, more generally, for all processes requiring thermal treatment, such as cooking, pasteurisation, reheating, drying, but also defrosting large blocks of frozen products.

Ares is a combined-technology oven, meaning that users can create recipes by selecting both microwaves and conventional heating using electric heating elements. The two energy sources can be selected one at a time or both together. This has been designed to provide maximum flexibility of use and therefore the best result for the user.

Applications

Process flexibility for professional use, product development and small-scale production.

  • Cooking of food products in packaging, open containers or on trays
  • Defrosting and reheating
  • Pasteurisation of food products in closed packaging
  • Drying and laboratory testing
  • Small-scale production

How it works

The batch oven is a compact industrial microwave oven designed to carry out thermal treatments and experiments on food products, combining different technologies within a single processing chamber.

The machine allows cooking, pasteurisation, reheating, drying and defrosting processes to be developed by integrating microwave treatment with chamber heating, the grill function and steam generation (optional).

Combined technology: focus on flexibility

The system applies microwave energy through specially designed power supplies installed in the upper section of the treatment area, optimising uniform energy distribution across the product and simplifying maintenance operations.

Microwaves

The main treatment is carried out using microwave technology, which allows the product to be heated directly inside the chamber.

The system consists of two 4 kW microwave power supplies, providing a total installed microwave power of 8 kW. Each power supply incorporates four 1 kW magnetrons, and the power can be adjusted via the operator panel.

Hot air and grill

In addition to microwaves, the batch oven features a static chamber heating system using electric heating elements.

The temperature is measured by a probe and automatically regulated according to the value set by the operator, up to a maximum adjustable temperature of 200 °C.

An additional heating element dedicated to the grill function is located in the upper section of the chamber, extending the range of possible treatments for the product.

Steam

The oven can be equipped with a steam generation system, which allows steam to be introduced directly into the treatment chamber.

This optional function can be used in combination with the other available technologies, increasing flexibility in defining and experimenting with different thermal processes.

Materials and chamber

The machine is constructed with a stainless steel structure. The treatment chamber is located in the central section, while the microwave generation system, its cooling system and the fume and steam extraction system are housed in the upper section.

The compact configuration integrates the main systems required for treatment and process control within the machine.

The rotating plate carries the product throughout the treatment cycle.

The front door, which can be opened up to 90°, is equipped with a shielded inspection window; active lighting inside the chamber allows the operator to observe the product during processing without opening the oven.

Loading plate

The treatment chamber is equipped with an 830 mm diameter stainless steel rotating plate on which the product is placed. The plate can be removed for cleaning or maintenance.

The product can be processed directly on the plate or in trays, bowls, baking dishes and containers suitable for the intended use. The chamber opening is 917 mm wide and 305 mm high.

Integration and control

The ARES oven is operated via a touch screen operator panel, which allows the main process parameters to be controlled and monitored.

The operator can adjust the microwave power level, chamber temperature and cycle time, adapting the treatment to the product characteristics and the process to be developed.

ARES is equipped with a colour-coded visual indicator system that allows the oven's operating status to be identified, even from a distance.

Simplified maintenance

  • Routine cleaning can be carried out safely by a single operator.
  • The treatment chamber can be cleaned in every corner.
  • The rotating plate can be removed and washed separately.
  • The technical compartment can be accessed by opening the rear metal panel.
  • The microwave system is a compact unit that, in the event of a malfunction, can be removed by non-specialist personnel and sent to the manufacturer for maintenance.
  • Flexibility and ease of use

ARES is a plug-and-play oven, designed for multiple applications and to ensure:

    • Stability and uniformity: process stability in terms of temperature is fully controlled under all environmental conditions.
    • Option to select the heating method: conventional heating or microwaves.
    • Complete cleanability and accessibility of technical compartments.
    • Ease of use.
    • Maximum levels of operational safety.
    • Compact design.
